If you’re like us, you’re knee-deep planning camping trips, travel adventures, outdoor festivals and everything in between. When we’re not daydreaming of warm weather, we’re also planning our summer brews and this month you can even taste a little bit of spring. An American Farmhouse brewed with wild yeast, Brettanomyces – refreshing, light, and hazy with a medley of citrus and funky fruit notes.

Profile
At 5.5% ABV (alcohol by volume), Wild Life pours a deep, hazy gold colour, adorned with a thin and wispy head. Expect citrus and stone fruit aromas on the nose alongside funky yeast notes from the mix of Brettanomyces and Saison yeast (Saison is a style of Farmhouse Ale). A light mouthfeel delivers fruit-forward notes on the palette as citrus and peach flavours shine brightest. A tart, drying finish leaves the tongue craving the next sip.
What is Brettanomyces?
It's a specific type of yeast. The name means "British fungus" but it's not as regional as that might suggest. Brettanomyces grows naturally on the skins of fruits of all kinds. It exists in the ambient environment, or you could say, in the wild.Historically, brewers have attempted (with varied success) to protect their beers from coming into contact with the wild yeast as it imparts its distinctive, signature flavours of funkiness, spice, fruit notes, and mild tartness onto all beers. Like all life, it strives to prosper and spread itself so today's brewers use modern sanitation techniques to keep this yeast in check.
After we introduced the Brettanomyces yeast culture to this beer, we waited four months before canning it to afford the time needed for the flavours to evolve and develop.
Suggested Food Pairing
To complement the fruity citrus notes of this wild yeast ale we suggest enjoying it with a fruit salad. Chicken also makes a great food pairing as allows the more subtle nuances of the beer to remain prominent.Glassware
If you can avoid the temptation of sipping directly from the can, we recommend pouring this beer into a large tulip glass to appreciate the haze appearance and let the aromas escape from the aluminum vessel. Enjoy between 7-9ºC.
Story
For those unacquainted with Wildlife Haven, they’re a non-profit charitable organization that provides medical care to sick, injured and orphaned wildlife in Manitoba!
1$ from each four-pack goes directly to them and helps support their mission of rescuing, rehabilitating, and releasing wildlife.Based in Île des Chênes, MB, their volunteer-driven charity has cared for over 50,000 animals since 1984.
Located on 18 acres of land, their campus is home to a state-of-the-art accredited wildlife hospital fully equipped with a licensed veterinarian, diagnostic equipment, and an operating room to provide emergency care, procedures, and surgeries for sick, injured, and orphaned wildlife from all over Manitoba.

A clean crips Kölsch aged on 100kg of strawberries, delivering a smooth and fruity thirst-quenching taste of summer.

When you think of a strawberry, you naturally think ‘sweet’ because, like most berries, strawberries contain natural sugars.
But what happens, when the yeast in our beer consumes those sugars to produce alcohol and carbon dioxide?
You’re left with the flavour of strawberry without the sweet taste of the sugars. In the brewing world, our Strawberry Kölsch would be called highly attenuated meaning the fermentable sugars have been mostly or completed fermented. This delivers a drying finish as opposed to a rich or sweet finish.

Strawberry Kölsch pours a hazy orange with a frothy, off-white head. Expect strawberry, light graininess, and honey sweetness aromas on the nose. A light body with moderate carbonation delivers fruity strawberry notes which elevate the clean flavours of an easy-drinking Kölsch without any prominent sweet/syrup characteristics. The finish is crisp and drying.

A gracefully complex Belgian farmhouse ale.

Background
This style of beer was born in 1700’s, where it was designed to quench of the thirst of Belgium’s seasonal farm-workers known as “saisonniers”.Farm Workers were entitled up to five litres each workday so the alcohol content was limited to roughly 3% ABV (alcohol by volume). Saisons were brewed during the winter and fall months to avoid the likelihood of spoiling due to bacteria.

Our Saison pours a hazy orange colour with a persistent, rocky, white head. Expect Belgian phenolics with citrus and alcohol notes on the nose. A medium body with sparkling carbonation delivers sweet malty notes to start, followed by warm alcohol notes and slightly tangy citrus flavours on the palate. The finish is clean and drying with a restrained bitterness.Food Pairing
